Elk Meatballs in Tomato Sauce

Ingredients:

  • 1 lb ground elk meat

  • 1/2 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 egg

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • 2 cups marinara sauce

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, combine elk meat, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix well.

  3. Roll mixture into 1-inch meatballs and place on a baking sheet.

  4. Bake for 20-25 minutes or until cooked through.

  5. Meanwhile, heat marinara sauce in a large pot.

  6. Add meatballs to the sauce and simmer for 10 minutes.

  7. Serve with spaghetti or garlic bread.
