Elk Chili recipe

Ingredients:

  • 1 lb ground elk meat

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) diced tomatoes

  • 1 can (6 oz) tomato paste

  • 1 cup beef or vegetable broth

  • 2 tbsp chili powder

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté onions and garlic in olive oil until softened.

  2. Add ground elk meat and cook until browned, breaking it up with a spoon.

  3. Add chili powder, cumin, smoked paprika, salt, and pepper, and stir for 1 minute.

  4. Stir in beans, tomatoes, tomato paste, and broth. Bring to a simmer.

  5. Reduce heat and let simmer for 45 minutes, stirring occasionally.

  6. Serve with your favorite chili toppings like cheese, sour cream, or cilantro.
