Elk Chili recipe
Ingredients:
1 lb ground elk meat
1 onion, chopped
2 garlic cloves, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (6 oz) tomato paste
1 cup beef or vegetable broth
2 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions:
In a large pot, sauté onions and garlic in olive oil until softened.
Add ground elk meat and cook until browned, breaking it up with a spoon.
Add chili powder, cumin, smoked paprika, salt, and pepper, and stir for 1 minute.
Stir in beans, tomatoes, tomato paste, and broth. Bring to a simmer.
Reduce heat and let simmer for 45 minutes, stirring occasionally.
Serve with your favorite chili toppings like cheese, sour cream, or cilantro.
