Slow Cooker Elk Stew
Ingredients:
2 lbs elk stew meat, cubed
4 cups beef broth
3 carrots, peeled and sliced
3 potatoes, cubed
1 onion, chopped
2 garlic cloves, minced
1 tbsp tomato paste
1 tsp thyme
Salt and pepper to taste
Instructions:
Add all ingredients to a slow cooker.
Stir to combine and season with salt and pepper.
Cook on low for 7-8 hours or until meat is tender and flavors meld.
Serve hot with crusty bread.
