Slow Cooker Elk Stew

Ingredients:

  • 2 lbs elk stew meat, cubed

  • 4 cups beef broth

  • 3 carrots, peeled and sliced

  • 3 potatoes, cubed

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 tbsp tomato paste

  • 1 tsp thyme

  • Salt and pepper to taste

Instructions:

  1. Add all ingredients to a slow cooker.

  2. Stir to combine and season with salt and pepper.

  3. Cook on low for 7-8 hours or until meat is tender and flavors meld.

  4. Serve hot with crusty bread.
